This past fall my body suddenly became intolerant to gluten and dairy which meant a whole change to diet. As someone who absolutely LOVES bread this was quite a devastating blow. A few months later it became evident that it would be beneficial to remove these food items from my son's diet. And so we have, as a whole family, begun a gluten-free, dairy-free, soy-free, dye-free lifestyle. Since both my sons are so young and are already picky eaters we decided to slowly wean from these foods instead of going cold turkey. We have successfully managed to get most of these food items out of their diet and now the fun begins with trying to expand their limited diet. It is a slow, long, process but we have already seen the benefits of it which gives us the motivation to continue when it gets hard.
I have been doing a lot of experimenting in the kitchen as I learn to cook and eat with diet limitations. Last night I pulled out my ingredients, started getting them prepped and realized that the mushrooms I had intended to use had gone bad. Which wouldn't have been a terrible thing if it weren't for the fact that the mushrooms were to be a star ingredient. So I scrapped that idea and made some gluten-free lemon bars while I debated what I couldn't cook instead (I know, great job on the healthy food, right? They were delicious, by the way). I finally decided on making it an easy meal night and made egg wraps. I have missed being able to have tortillas. Thankfully the brand Siete makes a decent cassava tortilla. It will never match anything made with gluten but when you are desperate for a wrap they fit the bill. They aren't as flavorful as I would like and are extremely flat with no fluff but they hold my food and give me a wrap experience so I can't much complain there.
I filled these wraps with eggs, sautéed onion, bell pepper, and spinach, crumbled bacon and salt and pepper. It was the perfect, warm food experience after a long day that filled my tummy with happiness and joy.
Now here's to hoping my spinach doesn't go bad before I get more mushrooms...
